Vegan Noodle Salad with red bell pepper, onion, celery, gherkins and mayonnaise dressing

Vegan Noodle Salad

This healthy Vegan macaroni (noodle) salad is perfect for your summer potlucks, picnics or a quick, satisfying meal for the whole family.

Packed with a variety of nutritious ingredients and a creamy dressing, this pasta salad is sure to be a hit at your next gathering. Plus, it’s easy to make and you can enjoy it all week long.


Ingredients

  • 16oz Organic Whole Wheat elbow pasta
  • 1/2 red onion
  • 1-2 red organic bell peppers (cored and diced)
  • 1 cup organic frozen peas
  • 1 cup organic frozen organic corn
  • 1 cup organic frozen edamame

Dressing

  • 2 cups Vegenaise (Vegan Mayo)
  • 1/4 cup Apple Cider Vinegar
  • 1 1/2 tablespoons Dijon Mustard
  • 2 tablespoons Pure Maple Syrup
  • 1 teaspoon Himalayan Salt
  • 1/2 teaspoon Pepper
  • 2 teaspoons Dried Dill
  • 2 teaspoon Majoram
  • 2 teaspoon Thyme

Directions

1. Cook the pasta until soft, drain and set aside.

2. In a bowl mix together, the Vegenaise, mustard, vinegar, maple syrup.

3. Add the spices to this mixture.

4. Toss together the noodles, bell peppers, onion, peas, corn, and edamame.

5. Pour the dressing over the noodle mixture and stir until noodles and vegetables are coated with the dressing.

6. Chill and serve.
