Tofu Wraps

Who doesn’t love a good tofu wrap? They’re easy to make, and they’re so customizable – a few simple ingredients, your favorite vegetables, and you have lunch on-the-go or a quick dinner at the end of a long day.

Simple tofu wrap make the perfect quick, healthy meal. These vegan tortilla wraps are filled with powerhouse ingredients to get you through the day!


Ingredients

  • Medium sized Whole Wheat Tortillas
  • 1 x 14 oz package of firm tofu
  • 1 x 14 oz package of silken tofu
  • 1 cup of Vegenaise = Vegan Mayonnaise
  • 1 Tablespoon Dijon Mustard
  • 8 medium carrots, peeled
  • 1 red Bell Pepper
  • 1/2 bunch of fresh Parsley
  • 1 bunch of fresh Cilantro
  • Tomatoes
  • 3 Tablespoons of Green Onion, diced
  • 6 Tablespoons of Nutritional Yeast
  • 2 Tablespoons Curry Powder
  • 1 teaspoon pink Himalayan Salt
  • 1/2 teaspoon pepper
  • 1 teaspoon Majoram
  • 1 teaspoon Thyme
  • 1 teaspoon Turmeric Powder

Directions

1. Drain the water from the tofu packages and squeeze out as much water as possible from tofu blocks and place in a large bowl.

2. Add Vegenaise, mustard and mix.

3. Add spices. Nutritional Yeast and green onion and stir.

4. Cut half of the carrots into smaller pieces and place into a food processor along with the bell pepper, cilantro and parsley. Blend and add to the tofu mixture.

5. Cut the rest of the carrots into smaller pieces, place in blender and blend and add to the tofu mixture.

6. Spoon this filling into flour tortillas, sprinkle some tomatoes on top, roll up and serve.
