Vegan Muffins

Morning Glory Vegan Muffins

These healthy vegan muffins are packed with nutrition!

Not too sweet and loaded with anti-inflammatory ingredients and healthy fats, these muffins are easy to prepare and SO tasty!


Ingredients

  • 2 cups of all-purpose flour 
  • 3 teaspoons baking powder
  • 1/2 teaspoon Himalayan salt 
  • 1/2 cup Lakanto Monkfruit Sugar (zero glycemic. zero calories.  zero carbs) 
  • 1/4 cup apple sauce (to replace 1 egg) 
  • 1/4 cup Vegan butter, melted (Melt Organic) 
  • 1 cup nut milk (I used Coconut Milk) 
  • 1 tsp vanilla extract 
  • 1 Tbsp lemon juice or apple cider vinegar (makes the muffins fluffy, you will not taste it.
  • 1 cup of vegan chocolate chips 
  • 1 cup of blueberries if you like. 

Directions

1. First combine the dry ingredients in a mixing bowl.

2. Then add the wet ingredients and mix slowly with an electric mixer or by hand with a whisk if you like.

3. Add the chocolate chips and fold them in. 

4. Add the blueberries (if you like) 

5. Evenly spoon the mixture into the muffin tin. Make sure that the batter is almost to the top. 

6. Bake at 375 F for 25 minutes. 

7. Allow to cool for 5-10 minutes in the pan before transferring them to a wire rack to cool completely.


I personally created and tested each recipe and my kids gave them the taste-approval.
