Curried Tofu Bowl

Are you passionate about a food that is full of goodness and flavor? I present the curried tofu bowl.

Making an excellent tofu curry is easy. I will show you how to put this meal together quickly and satisfy everyone at the table.

My curried tofu bowl recipe combines protein-packed tofu bites with a creamy, rich aromatic sauce and your choice of vegetables.

Curried Tofu tastes fresh and delicious, and as a bonus, it contains turmeric and ginger, which have rightfully reached superfood status – they act together to decrease inflammation in the body.


Ingredients

  • Baked Tofu cut into cubes (see Baked Tofu Recipe)
  • 2 cups of cooked brown or wild rice
  • 6 medium potatoes, cooked and cubed
  • Steamed Broccoli or cauliflower (or your choice of vegetable)
  • 4 carrots, peeled, sliced and steamed
  • Green onions, chopped

Ingredients For The Curry Sauce

  • 3 tablespoons Vegan Butter
  • 1 cup of Vegan Yoghurt
  • 1 cup of Vegan Milk
  • 1 Low Sodium Vegan Bouillon Cube
  • 2 tablespoons of Arrowroot Powder
  • 1 medium onion
  • 4 garlic cloves, chopped
  • 1 inch of fresh ginger, peeled and chopped
  • Juice of 1/2 lime
  • 2-3 tablespoons soy or Tamari sauce
  • 2 tablespoons maple syrup
  • 1 teaspoon turmeric powder
  • 1 tablespoon curry powder

How To Make The Curry Sauce

1. Sauté the onion in butter until translucent.

2. Add the ginger and garlic and sauté 2 more minutes.

3. Add all the spices, Tamari sauce and Maple Syrup and stir.

4. Add the Bouillon cube and dissolve.

5. Add the yogurt and cook another minute.

6. Take off heat and set aside.

7. Put Vegan Milk into a blender and add 2 tablespoon of Arrowroot Powder and blend.

8. Add this Arrowroot mixture to the yoghurt and slowly bring to a boil, stirring constantly.

9. When thickened, turn off heat.

How To Assemble The Curry Bowl

1. Pour this sauce over the rice, potato, carrot, broccoli (or cauliflower or your choice of vegetable) mixture.

2. Cook for another 5 minutes on low heat until everything is warm.

3. Garnish with green onions.
