Bean Tostadas (Grain-Free)
Did you ever wonder if it is possible to make a satisfying meal in 10 minutes or less? The answer: Yes! Bean Tostadas.
Canned beans are fast, healthy, and convenient, making them ideal for last-minute dinners like these tostadas.
The garden spices add a great flavor and are loaded with cancerfighting antioxidants and the Mexican spices add the kick.
Ingredients
- Grain Free Taco Shells, I break them in half to make tostadas
- 2 x 15oz of Vegetarian, organic Refried Beans
- 2 x 4oz of Mild Chopped Green Chilies
- 1/2 cup of tomato sauce
- 1 small onion, diced
- 2 garlic cloves, chopped
- Extra Virgin Olive Oil
- 1-2 teaspoons of Cumin
- 1-2 teaspoons of Chili Powder
- 1-2 teaspoon of Paprika
- 1 teaspoon of Marjoram
- 1 teaspoon of Thyme
- Shredded Vegan Cheddar Cheese
Directions
1. In a saucepan sauté the onion until translucent.
2. Add the garlic and sauté until golden brown.
3. Add the Refried Beans and stir.
4. Add the tomato sauce and the green chiles and stir.
5. Add the spices.
6. Simmer for about 10 minutes.
7. Spoon the beans on the tostadas and spread all over.
8. Sprinkle with Vegan Cheese.
Serve with a side of brown or wild rice, slices of Avocado and fresh tomatoes.
