A vegan-friendly chickpea and avocado toast sandwich

Avocado & Chickpea Sandwiches

Smashed Chickpea Avocado Salad Sandwich is the perfect healthy lunch or dinner!

This easy smashed chickpea salad can be eaten as a sandwich or served on greens, rice cakes, toast, or eaten as a dip with crackers or veggies!

It’s a kind of twist on egg salad, but I promise you won’t miss the eggs because this vegan salad is amazing!

It’s easy, healthy, fresh, and so delicious! Even your kids might like to help you make it. They will love smashing the chickpeas and avocado with a fork! Fun times in the kitchen!


Ingredients

  • Whole Wheat or Rye Bread Slices
  • 3 cups (2x15oz cans) cooked chickpeas, drained
  • 2 avocados
  • 1 teaspoon Dijon Mustard
  • 3 tablespoons lemon juice
  • 1-2 teaspoons of your favorite hot sauce
  • 1/2 teaspoon pink Himalayan Salt or Sea Salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped fresh dill or 1 teaspoon dried dill
  • 1/2 medium red onion, chopped
  • Lettuce
  • Tomatos

Directions

1. Add chickpeas, avocados and mustard to a food-processor and mix.

2. Add the lemon juice, hot sauce, salt, pepper, dill.

3. Transfer this mixture to a bowl and fold in the onion.

4. Spread this mixture on the bread slices and top with lettuce and tomato.

5. Finish with another slice of bread on the top.

6. Cut and serve.
