Vegan Tofu Scramble

Scrambled Tofu

In the Blue Zones, or parts of the world where people live much longer than average, they start their day with a savory meal.

Longevity experts recommend: scrambled tofu with turmeric and veggies. Bonus points if you add fruit and sourdough toast on the side!


Ingredients

  • I block of firm tofu
  • Rye bread
  • 1 small onion
  • Handful of spinach, chopped (optional)
  • Avocados
  • Tomatoes
  • Extra Virgin Olive Oil
  • 1 teaspoon of pink Himalayan Salt or Sea Salt
  • 1 teaspoon Paprika
  • 1teaspoon Turmeric
  • 2 teaspoons onion powder
  • 1 tablespoon low sodium soy or tamari sauce

Directions

1. Place block of tofu on a cutting board and place a paper towel over it and place another cutting board on the top and press as much water out of it as possible.

2. Crumble tofu into a bowl.

3. Add spices, soy or tamari sauce and mix.

4. Sauté onion in olive oil until translucent.

5. Add the tofu mixture, cook and stir for about 10 minutes on low heat.

6. Add the chopped spinach if you like and cook until spinach is limb.

7. Take off heat and allow to cool down for a few minutes.

8. Add cut up tomatoes if you like.

9. Toast some slices of rye bread if you like your bread toasted.

10. Smash up Avocado with fork and spread on rye bread.

11. Spoon scrambled tofu on top of the Avocado rye bread or eat the tofu on the side with your rye bread.
