What’s there not to love about a meatless Mexican cuisine?

We all know how Mexican casseroles go: vibrant and savory flavors, bold spices, and hearty moments among loved ones.

Mexican casseroles stand out as comforting, versatile, and perfect for gatherings or weeknight dinners.

Nowadays, it’s not only about traditions and habits, but about health and living cruelty free.

So embrace this Vegan Mexican Casserole.


Ingredients

  • 1 red bell pepper, chopped
  • 1 small onion, diced
  • 1 cup frozen organic corn
  • 2 cups of cooked brown or wild rice
  • 2 cups of vegetable broth
  • 1 cup fresh tomatoes or homemade tomato sauce
  • 2 x 15 ounce cans of organic, unsalted black beans
  • 1 teaspoon of pink Himalayan Salt or Sea Salt
  • 1/2 packet of Taco Seasoning
  • 1-2 teaspoons of Cumin
  • 1-2 teaspoons of Chili Powder
  • 1 teaspoon of Turmeric
  • 1 teaspoon Majoran
  • 1 teaspoon Thyme

Directions

1. Put all ingredients in a baking pan.

2. Mix up the ingredients with a spoon.

3. Preheat oven to 400F and cook for 30 minutes.
