Bean and Rice Burritos
Being at a loss for what to eat sometimes is normal, especially in our fast-paced society. There’s a reason why burritos are so popular and who doesn’t love a rolled up tortilla filled with rice, beans!
Vegan Burritos are easy to make and take with you to work or school and make a complete meal.
Ingredients
- Whole Wheat, medium size Tortillas
- Vegenaise = Vegan Mayonnaise
- 1/2 cup of tomato sauce
- 1 Bell Pepper, chopped
- 2 x 4oz Mild Diced Green Chilies
- 2 cups of cooked brown or wild rice
- 2 x 15oz organic, unsalted black beans
- 8oz frozen corn
- 1 small onion, diced
- 4 cloves of garlic, chopped
- 1 teaspoon of pink Himalayan salt or sea salt
- 2 teaspoons of Cumin
- 2 teaspoons of Chili Powder
- 1 teaspoon of Paprika
- 1 teaspoon of Turmeric
- Vegan Cheddar Cheese
- Lettuce leaves
Directions
1. Cook the rice and set aside.
2. In a saucepan sauté the onion until translucent.
3. Add the garlic and sauté until golden brown.
4. Add the beans, the tomato sauce, the chiles, the Bell Pepper, the frozen corn and the spices.
5. Mix and simmer for about 10-15 minutes.
6. Mix the beans with the rice.
7. Spread some Vegenaise on each tortilla.
8. Spoon some of the bean-rice mixture on each tortilla, sprinkle some Vegan Cheese, top with a lettuce leave and roll up.
Serve with fresh Guacamole, Vegan Sour Cream and fresh tomatoes.
