Avocado Pasta
Avocados are a powerhouse of nutrients and this makes, Creamy Avocado Pasta a nourishing and flavorful meal for the whole family. It contains just a handful of simple ingredients, is packed with protein and can easily be made gluten-free.
This recipe is satisfying and will prove all the unbelievers wrong.
Ingredients
- 24 ounces of pasta (I used Rotini)
- 4 large avocados
- 4 tablespoons Nutritional Yeast
- 2 Tablespoons Extra Virgin Olive Oil
- 2 Tablespoons Lemon Juice
- 1 cup of nut milk (I used Coconut Milk)
- 4 Garlic Cloves, chopped
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 cup fresh Basil
- 2 ounces Vegan Parmesan Cheese – optional (I used “Follow Your Heart”)
Directions
1. Cook the pasta and set aside.
2. Add avocados into a food processor and blend.
3. Add olive oil, lemon juice. nut milk and blend.
4. Add salt, pepper, garlic, fresh basil and Vegan Parmesan Cheese and blend.
5. Take this mixture out of the food processor and mix with the noodles.
6. Sprinkle with a little extra Vegan Parmesan Cheese and garnish with fresh Basil.
I personally created and tested each recipe and my kids gave them the taste-approval.
