Strawberry Chia Seed Pudding
Strawberry Chia Pudding is so simple to make and heavenly delicious. It’s one of the easiest healthy dessert recipes you can make with no baking. It’s creamy, perfectly refreshing, makes a great summer dish, indulgent and yet, loaded with nutrients.
Prepare this the night before for a tasty and healthy breakfast or snack, you can’t go wrong either way.
A winner recipe that you’ll make again and again.
Ingredients
- 1/2 cup of fresh or frozen strawberries
- 1 cup of Vegan milk (nut, hemp, soy)
- 1 teaspoon of vanilla extract
- 2-3 Tablespoons of maple syrup
- 1 teaspoon of lemon juice
- 1/4 cup of chia seeds
Directions
1. Put strawberries, Vegan milk, vanilla extract, maple syrup and lemon juice in a blender and blend until smooth.
2. Pour the strawberry milk into a container with a lid.
3. Add the chia seeds to the milk mixture and stir until mixed.
4. Allow the chia pudding to sit for about 10-15 minutes so the chia seeds can gel, but stir frequently to prevent any clumps.
5. After 15 minutes whisk well one more time.
6. Cover the bowl and place in the refrigerator for a minimum of 4 hours or overnight.
7. Remove the strawberry chia pudding from the fridge, stir once more with a spoon.
8. Serve in dessert glasses.
9. Top with strawberries, chocolate shavings, or chopped nuts.
Variation

- 1 teaspoon of vanilla extract
- 4-6 Tablespoons of maple syrup
- 1 teaspoon of lemon juice
- 1/2 cup of chia seeds

You can prepare this recipe using any fruit you like. For example: you can use raspberries, blueberries, mangos, peaches, pineapple.
